Statistical Information

Historical Statistics of the United States , 4th (Millenial) ed.
The "standard source for quantitative indicators of American history." In addition to the data series, essays "provide a general guide to the data, the sources, and the historical trends that have been emphasized in the scholarly literature" and include helpful reference lists and tables. Coverage varies by data series, but in some cases provide documentation from the 18th century to 2000. Of special interest for the history of the land are:

USA.gov Data and Statistics 
Statistics from US federal agencies on a wide range of topics grouped by subject. Note the section on Energy, Environment & Agriculture.

USDA Census of Agriculture
Covering 1840 through 2007, with fact sheets on farming practices, production, farm numbers, and other topics for later years.
